I love Mexican food!  I could eat it everyday and not grow tired of it!  I love this raw taco salad!  It’s healthy, easy to make and seriously tastes like the best taco salad ever!   It’s versatile and a great way to incorporate lots of vegetables into your diet!  This recipe is fantastic with shredded red cabbage or even red cabbage “chips.”  If you enjoy cheese, feel free to add a raw vegan cheese sauce to the mix or even raw salsa!

Salad Ingredients:

  • Lettuce or Salad greens
  • Tomatoes
  • Portobello mushrooms
  • Sweet peppers
  • Alfalfa Sprouts
  • Lime

Taco Meat Ingredients:

  • 1 cup raw pumpkin seeds
  • 1 cup raw walnuts
  • 1 cup tomatoes
  • 1 tbsp turmeric
  • 1 tbsp cumin
  • 2 tsp cayenne
  • 1 garlic clove
  • 1 shallot
  • 1 tsp sea salt

Raw Chili Ingredients:

  • 5 mini Portobello mushrooms (finely chopped)
  • 1 sunchoke (minced)
  • 1 shallot diced
  • 1 sweet pepper (finely chopped)
  • 2 medium carrots (finely chopped)
  • 1 cup raw pumpkin seeds (finely chopped)
  • 1 cup tomatoes (puree)
  • 3/4 cup filtered water
  • 1 Tbsp olive oil
  • 1/4 cup coconut aminos
  • 1 clove garlic
  • 2 tbsp dried oregano
  • 1 tbsp cumin
  • 1.5 tsp cayenne pepper (less or more depending on desired heat)
  • 1 tsp crushed red pepper (less or more depending on desired heat)
  • 1 tbsp raw apple cider vinegar
  • 1 tbsp raw sweetener

Guacamole Ingredients:

  • 2 avocado
  • 1 Shallot
  • 1 small tomato
  • Juice of 1 lime
  • 1 tsp sea salt
  • 1 tsp crushed red pepper

Chili Instructions:

  1. Using food processor, process all vegetables (except tomatoes) and pumpkin seeds until finely chopped.
  2. Place contents of food processor in separate bowl.
  3. Add liquids, tomatoes, and spices to food processor and blend to make a sauce.
  4. Add sauce to vegetables and seeds and mix.
  5. Place in food dehydrator at 115 degrees for one hour to warm or leave out to eat at room temperature.

Taco Meat Instructions:

In food processor, pulse seeds and nuts to form a fine powder with some larger chunks to give meat texture.  Add in the rest of ingredients and blend.

Guacamole Instructions:

In food processor blend tomato, shallot, lime juice, crushed red pepper, and sea salt.  Mash avocado with a fork and dump contents of food processor into avocado and mix.

Assembly Instructions:

Shred lettuce and assemble tomatoes, mushrooms, and peppers on plate.  Scoop one scoop of chili, meat, and guacamole on top of salad.  Top with sprouts and lime for garnish.  Mix and enjoy!
