Avocado Beet Soup Recipe

This Avocado Beet Soup is a tasty blend of earthy, bitey flavors with a touch of cashew creaminess!

Ingredients / Grocery List:

Soup Ingredients
  • 1/2 avocado
  • 1 peeled beet
  • 1 tablespoon tamari
  • 1 tablespoon miso
  • 1 peeled garlic clove
  • 1 tablespoon peeled fresh ginger root
  • 1 1/4 cups hot water (more or less to preferred thickness)
  • 3 mushrooms
  • pinch of salt & pepper
  • juice of 1/2 lemon
Cashew Cream Ingredients
  • 1/4 cup soaked, drained cashews
  • Cinnamon and salt to taste

Pre-Prep Steps:

  1. Pre-soak the cashews for a few hours to get them prepped for digestion.

Soup Instructions
  1. Blend all soup ingredients until smooth.
  2. That's it!
Cashew Cream Instructions
  1. Use a small food processor to blend the cashews, salt and cinnamon until a creamy texture develops. Add water if needed (if it's too thick) but be careful to add it in small increments. Too much may make it way too runny; remember, you can always add more little by little.
  2. Stir in a teaspoonful into your soup, swirl for a pretty effect and enjoy!
  3. Top with seeds or herbs if you prefer.

Health benefits of the avocado beet soup

If inflammation is a concern, rest assured that the beet portion of this soup is extremely helpful in keeping it at bay. Their phytonutrients behave as inflammation-fighting compounds and some research has linked consumption of them with combating tumors, Type 2 diabetes and even helping to manage heart problems such as atherosclerosis.(1) Beets’ antioxidants are also linked with helping eye health concerning keeping nerve tissue (there and all throughout the body) in shape.(1)
